From small, independent establishments to national chains, the COVID-19 pandemic continues to necessitate an evolution in operations. Buster’s Texas Style Barbecue

Nearly 40 years in the smoking meat business, Buster’s meat-and-three-style barbecue holds well in a to-go container. Pork spare ribs, smoked turkey, hot link, and the all-meat Texas-style chili will make for a nice backyard picnic as the spring weather improves. Banning’s Restaurant & Pie House

This classic diner on Pacific Highway was built for families and long-haul truckers alike. The entire menu, which includes breakfast, lunch and dinner, is available for takeout and delivery via Grubhub. The restaurant is also slinging “family packs” in the form of hefty chicken pot pies and lasagna. No one should sleep on the dessert pies, as it is a pie house, after all.

Pizza Caboose

Pizza delivery is an obvious choice during quarantine, and these pies arrive hot thanks to the ovens in the company’s vehicles. These are nostalgic, after-teeball pizzas, providing a independent restaurant alternative to the national chains.

Ezell’s Famous Chicken

This Seattle favorite is new to the Rose City and was entertaining lines around the building before the pandemic reared its ugly head. Available in original or spicy, the massive menu comes in all shapes and sizes, with sides like mac and cheese, mashed potatoes and gravy. Mugen Noodle Bar

Taste of Sichuan

Heralded as a premier Sichuan cuisine destination in the Portland metro area, the Beaverton spot continues to serve Chinese-American classics like Mongolian beef and orange chicken, as well as Sichuan staples like hot pots and dry-cooked pork intestines. Takeout and delivery are available via Postmates and GrubHub. Taste of Sichuan is best enjoyed by heat seekers, so those who can’t handle spice should look elsewhere.

Big’s Chicken

Oolong Yuan

This Taiwanese cafe is a standout throughout the greater Portland area, with quintessential Taiwanese dishes like beef noodle soup, pork rice (both fried chop and minced pork), and bao — not to mention salty soy milk. Order takeout by calling (503) 206-5576.

Tan Tan Cafe & Delicatessen

Vietnamese classic Tan Tan Cafe & Delicatessen — known for its pho, banh mi, and other classic dishes — is open for takeout and delivery through Postmates.

The Meating Place

This butcher shop is a smart spot to pick up some groceries for curbside pickup, but the shop’s cafe is also open for takeout sandwiches like french dip and reubens. Customers can order online or call (503) 533-0624.

Vivi’s Vietnamese Noodle House

Hillsboro residents craving pho, bun bo hue, or Vietnamese iced coffee can order takeout or delivery from Vivi’s. Health care workers can get a free meal at Vivi’s every Wednesday in April, as long as they have their work badge.

Salam Restaurant

This Persian and Lebanese restaurant is offering its flatbreads, kabobs, and mezze for takeout or delivery, with online ordering options for both. The real move is to go for some of the harder-to-find dishes, like the mirza ghasemi, an Iranian eggplant dish with egg and tomato.
