This is one of my favorite road trip recipes to prepare!

Whenever I plan a picnic, a long car-trip, or anything of that nature, my mind automatically thinks sandwiches and macaroni salad! I’m a simple woman, I guess you could say?

This vegan “chicken” sandwich recipe only calls for a handful of ingredients. These include meatless chicken strips, celery, green onions, vegan mayo, almond milk, and various seasonings. The recipe is so incredibly simple to make. Simply cook the vegan chicken strips, shred them in a food processor (or cut up into thin chunks) and add the other ingredients! Voila! It’s ready to eat.

This one is pretty much my go-to recipe when it comes to vegan “chicken” sandwiches! I hope you like it!

The original wrap is breaded and filled with chicken, creamy avocado ranch dressing, lettuce, tomato, and grated cheese. The “veganized” version is packed with plant-based protein. Ingredients include chickpeas, vegan Worcestershire sauce, soy sauce, vegetable stock, breadcrumbs, and various herbs and spices⁠—just to name a few.

This vegan egg and chicken special fried rice also makes for a tasty, hearty dinner!
