Biryani is a popular dish everyone loves and with its various recipes, there is nothing better than biryani for a delicious and fulfilling meal. This is a vegan recipe as you are adding tofu in it. Before starting to prepare the recipe, preheat the oven to 350°F. Take a small pot, combine 1 cup basmati rice and 1 1/2 cups of water, and bring to a boil over high heat. Cover the pot and reduce the flame to low and cook for 5 minutes. Remove from the heat and let it sit, covered, for 10 minutes. Next, in a large frying pan, heat 2 tbsp vegetable oil over medium-high heat. Then, add 1 minced onion and cook for 7 to 8 minutes until it is soft and light brown. Add 4 minced garlic cloves and a 2-inch piece of ginger finely minced, and cook for 1 minute. Add 1/2 cup chopped tomatoes, 4 green cardamoms, 1/2 tsp coriander powder, 1/2 tsp cumin, 1/4 tsp cinnamon, 1 tsp garam masala and 1 tsp sea salt and cook for 3 minutes. Remove the pan from heat and stir in 250 grams cubed tofu, 2 tbsp raisins and 3 tbsp shredded almonds. Put half of the cooked rice in the bottom of an ovenproof dish. Next, layer in half of the tofu on the rice, then rest of the rice and finally the remaining tofu. Cook the biryani uncovered in the preheated oven for 30 minutes.
