Soko is a staunch gluten-free, sugar-free vegan and wanted to share one of her favorite baking recipes with Just Jared readers – “chocolate chip cookies”!

“These cookies are based on a minimalist baker recipe,” the French singer-songwriter told us. “I love it because they have a lot of vegan, gluten-free and sugar-free options. All of their foods are super easy to make. I altered the recipe a bit to add flax meal for more chewiness and Omega-3s. And add cacao nibs for more crunch! It feels like the perfect guilt free snack and my baby [Indigo] loves it too! The healthiest, simplest and yummiest vegan chewy cookies ever ever.”

SOKO’S CHOCOLATE CHIP COOKIES RECIPE

INGREDIENTS
1 cup of gluten-free rolled oats
2 ripe bananas
1 tbsp of coconut oil
1/2 cup of cacao nibs
A pinch of salt

INSTRUCTIONS
– Pre-heat oven at 350F
– Mash the bananas in a bowl, add everything else, scoop and make about 8 balls, so they’re more like chewy bites.
– Bake for 20 to 25 min
