Freshly baked, soft, warm, cinnamon rolls are a real treat. Sticky and moreish, it’s not surprising they are packed full of calories.

However, we’ve found a quirky recipe that combines all the delicious qualities of a traditional bun, but the end result is much healthier for you.

Instagram foodie @cakeontherun is known for her quick and easy concoctions and her latest recipe does not disappoint.

Perfect for breakfast or a weekend brunch, her cinnamon roll banana pancakes are a game changer and they even count as one of your ‘five a day’. They can easily be made gluten-free simply by swapping standard flour for a gluten-free option.

Plus, as they contain no eggs, they can be vegan-friendly if you use a non-dairy milk such as soya or almond. Traditionally, cinnamon buns are smothered in a thick, sweet icing.

However, this healthy recipe uses yoghurt and maple syrup and is just as satisfying.

Cinnamon roll banana pancake recipe (serves 2)

Ingredients

  • 200g mashed over-ripe banana
  • 100g self raising flour
  • A squeeze of lemon juice
  • 1 tsp baking powder
  • 150ml any milk
  • Filling – 1 tsp ground cinnamon and 2 tbsp sweetener

Method

  1. Chop banana and microwave for 1 minute until mushy (over ripe bananas are best and even better if you’ve got some from frozen as when microwaved they create a natural sweet juice).
  2. Put everything into a bowl and mix until smooth.
  3. Spray cooking spray/oil into a pan and fry pancakes on each side for a minute or so.
  4. Transfer onto a plate. Mix the sweetener and cinnamon together and then spoon onto each pancake.
  5. Roll up each pancake and slice to make roll ups.
  6. Serve with plain yoghurt and a drizzle of maple syrup.
