Influenced by Indian cuisine, Thai cuisine uses several ingredients that you’re already familiar with–like ginger, garlic, palm sugar, coconut milk, etc. However, there are quite a few basic ingredients that you might not be aware of. Galangal looks similar to ginger, and if you don’t have the former, the latter can be used as a substitute. But if you’re looking to add an authentic touch to homemade Thai food, then you can’t let go the tart citrusy flavour of galangal. Use just as you use ginger!

Kaffir Lime

Both the zest of the fruit and the leaves of this plant are used in Thai food. Although far from the tart flavour of Kaffir limes, regular lemon zest will serve the purpose. Bay leaves, and lemon thyme can also be substituted for Kaffir lime leaves.

This herb adds a herbal and fresh citrusy flavour to Thai food. If you find fresh lemongrass, remember to discard the stalk and rough outer layers, using only the soft inner layers at the base. Lemongrass paste is an excellent alternative to the fresh herb. If you don’t have either, use lemon zest.

Thai basil and Holy basil are different from the European or Italian basil. Thai basil is sweet while Holy basil is sour and citrusy. You can choose to replace either with European basil or cilantro.

Fish/Oyster Sauce

Both fish and oyster sauce add umami flavour to Thai food and are key ingredients in this cuisine. If you have Worcestershire sauce on hand instead of these, you can try it in your Thai recipes. If you’re a vegetarian, you can use an oyster sauce substitute that’s made with mushrooms. If you want to leave the sauces out altogether, add extra salt to make up for the lost saltiness. Soy sauce can be the perfect substitute for both salt and flavour.
